One-pot chilli and garlic rice with chicken…

  

We love mexican food, and in the past I have brought the Kits from the supermarket. The problem I have with the kits, as nice and easy as they are is the fact you don’t know exactly what goes into your food. Plus, they contain preservatives and quite frankly they are expensive for what you get. So, I decided to attempt my own version of the chilli and garlic rice meal by old el paso.

  

  • 2 Diced chicken breasts
  • 1 tin of chopped tomatoes
  • 1 tbsp chipotle paste (or chilli powder to taste)
  • 1 onion, thinly sliced
  • 1 tin, drained, sweetcorn
  • 2 peppers, sliced
  • 5 mushrooms, sliced
  • 1 mug rice
  • 2 mugs water
  • 1 tbsp paprika
  • 2 tbsp tomato puree
  • 1 tsp oil
  • handfull of parsley, chopped
  • juice of half a lemon
  • 1 tsp honey

Heat the oil in a large pan, and add the chicken. When browned, Stir in paprika, chilli, garlic and vegetables. When starting to soften(about 5 minutes), add the rice and cook for a further 2 minutes, stirring continuously. Add tomato puree, and season. cook for a further 2 minutes stirring all the time. add remaining ingedients, stir well and cook for approximatly half an hour until all the liquid is absorbed and the rice is has some bite. Serve with a little sour cream.

serves 4-6

I haven’t done a “my month” post in ages! I keep forgetting, and then its too late to post but never mind, I’m hoping to get back on track now! So really, this month have been about spending time together enjoying the sun and the good weather! My beautiful sister turned 13 so we had that to celebrate. We’ve also been on a few days out to the park, and to a steam rally! We had a lovely time and Lillee had great fun on the slides and going on a “train” (it was a traction engine ride) Hope you’ve all had fun this month!

Snow, snow and more snow! its been snowing an awful lot lately just here in staffordshire, so playing outside was a must. It’s all gone now, but we enjoyed it while it lasted. The comfort food was a hit in our house, especially the cobbler it may just become a new family favorite! The cake-in-a-jar was a huge success too something i’m definetly going to be making again.

January is traditionally a time to make resolutions. Out with the old and in with the new. New recipes, preparing new things for a special someones birthday in the near future and playing in the first snow of the year seems to me like a fantastic way to start everything off to me. And so, my resolution is this: Live well, laugh often, love much. (Bessie Anderson Stanley) I think we’ve made a good start so far.

The Housewife Challenge, 1 month in…

Well, It’s now a month since I began the housewife challenge. To be honest, I haven’t been overly succesfull so far. So lets remind ourselves of the rules…

  • Keep the house clean and tidy… well, I’ve kept half the house clean and tidy… the kitchen, living room, hallway, and Lillee’s room, however theres a HUGE pile of ironing in our room, and a rather large pile of washing in the bathroom waiting for my attention.
  • Keep Lillee clean and tidy… I think I succeded here! Although, to be honest it wasn’t anything I dont normally do. However, I have to admit, that as I’m typing this she has chocolate all around her mouth…
  • Proper, homecooked food… I kinda failed at this one. I think we’ve had more takeaways and ready meals this month than normal!!! and Lillee has had a few “out of the freezer” meals of fish fingers and smiley faces. Saying that, I have cooked sunday dinner twice, which is more than normal because Dan works on sundays.
  • Keep me looking good… There’s no real change here. Although I’ve lost a stone and a half now (yay me!) it means half my clothes are way to big and the other half are too small…so I’m looking kinda frumpy and I don’t have much time to style my hair properly. I think I’ll just have to keep trying at this one.

It may not be as bad as I first thought, but I’m still nowhere near where I want to be. Hopefully, this time next month I will be able to say that I’ve stuck to all the rules. we shall have to see.

The Housewife Challenge…

A few weeks ago, i was watching Anthea Turner’s “the perfect housewife”. it made me sit and think; my house is a tip i need to fix this. And so, the housewife challenge was born. as i have pretty much finished college for the summer i knew that this would be the perfect time to be a housewife of sorts.

the rules:

keep the house clean and tidy

keep Lillee clean and tidy

try and feed us proper food (as in homecooked… although to be fair i do alot of home cooking anyway!)

keep me looking ok…maybe!

so lets see how i do…
